- 2 pints cherry tomatoes
- 2 tbsp. extra-virgin olive oil
- 1 tsp. sea salt
- 3 garlic cloves, sliced thinly
- 1 tbsp. fresh chopped sage
- 2 medium-size lemons, thinly sliced
- 2 tbsp. capers to garnish
- Set the oven range to 325 F to preheat. Spread the tomatoes around the cod in the baking dish, and then drizzle the olive oil over both the cod and the tomatoes.
- Sprinkle salt, garlic, and sage over the cod and tomatoes, rubbed into the cod, and then topped with sliced lemons.
- Bake for 45 minutes until the cod easily flakes apart with a fork, then serve garnished with capers.
